SUNDANCE. Set within a wood-sheathed complex with gorgeous mountain vistas, this restaurant is Sundance's more casual venue. The Foundry Grill has a huge fireplace, along with rustic furnishings and artwork appropriate to a mountain setting. The cuisine is hearty American and includes such items as spit-roasted chicken, grilled seafood, beef, lamb, and poultry. Many of the ingredients come from the resort's gardens; breads are baked in-house as well. The food, comfortable and satisfying, honors the heritage of the area and of the country. Day visitors are welcome to partake of the cuisine or to sit on the patio and take in the views. As part of its ecological initiative, the resort melts down waste glass and transforms it into the restaurant's drinking glasses. |
